Ingredients

- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1/4 cup maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the carrot sticks with olive oil, maple syrup, salt, and pepper until well coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- If using, sprinkle fresh thyme over the carrots before serving.
Notes
- For extra flavor, add a pinch of cinnamon or nutmeg to the glaze.
- These carrots can be served warm or at room temperature.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
