Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 apples, cored and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups mixed greens
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss cauliflower florets with olive oil, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
  4. In a skillet, melt honey over medium heat and add apple slices and cinnamon.
  5. Cook apples until caramelized, about 5-7 minutes.
  6. In a large bowl, combine roasted cauliflower, caramelized apples, mixed greens, walnuts, and feta cheese.
  7. Toss gently and serve immediately.

  • For a vegan option, omit the feta cheese.
