Ingredients

- 1 head of cauliflower, cut into florets
- 2 apples, cored and sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups mixed greens
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss cauliflower florets with olive oil, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
- In a skillet, melt honey over medium heat and add apple slices and cinnamon.
- Cook apples until caramelized, about 5-7 minutes.
- In a large bowl, combine roasted cauliflower, caramelized apples, mixed greens, walnuts, and feta cheese.
- Toss gently and serve immediately.
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add other nuts or seeds for extra crunch.
