Ingredients

- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 ripe avocado, diced
- 2 cups mixed greens
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chickpeas with olive oil, paprika, garlic powder, salt, and pepper.
- Spread the chickpeas on a baking sheet and roast for 25-30 minutes until crispy.
- In a small bowl, whisk together tahini, lemon juice, and a little water to thin it out.
- In serving bowls, layer mixed greens, roasted chickpeas, and diced avocado.
- Drizzle with lemon tahini dressing before serving.
