- 1 medium spaghetti squash
- 1 head of garlic
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the cut sides and season with salt and pepper.
- Wrap the head of garlic in aluminum foil and place it in the oven alongside the squash.
- Bake the squash for 40-50 minutes until tender and the garlic for about 30-35 minutes.
- Once cooked, use a fork to scrape the flesh of the squash into strands.
- Remove the garlic from the oven, squeeze the roasted garlic cloves into a bowl, and mash them.
- Mix the mashed garlic with the spaghetti squash and add the grated Parmesan cheese.
- Toss everything together until well combined and serve garnished with fresh parsley.
