Description

Roasted Garlic Parmesan Spaghetti Squash is a flavorful and healthy dish that combines the nutty taste of roasted garlic with the richness of Parmesan cheese, served over tender spaghetti squash.


Ingredients

  • 1 medium spaghetti squash
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the cut sides and season with salt and pepper.
  4. Wrap the head of garlic in aluminum foil and place it in the oven alongside the squash.
  5. Bake the squash for 40-50 minutes until tender and the garlic for about 30-35 minutes.
  6. Once cooked, use a fork to scrape the flesh of the squash into strands.
  7. Remove the garlic from the oven, squeeze the roasted garlic cloves into a bowl, and mash them.
  8. Mix the mashed garlic with the spaghetti squash and add the grated Parmesan cheese.
  9. Toss everything together until well combined and serve garnished with fresh parsley.

Notes

  • For a vegan version, substitute Parmesan cheese with nutritional yeast.
