Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the carrots and Brussels sprouts.
  3. Drizzle with olive oil and maple syrup, then sprinkle with salt, pepper, garlic powder, and thyme.
  4. Toss until the vegetables are evenly coated.
  5. Spread the mixture on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
