Ingredients

- 1 lb carrots, peeled and cut into sticks
- 1 lb Brussels sprouts, trimmed and halved
- 3 tablespoons olive oil
- 1/4 cup maple syrup
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon thyme (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the carrots and Brussels sprouts.
- Drizzle with olive oil and maple syrup, then sprinkle with salt, pepper, garlic powder, and thyme.
- Toss until the vegetables are evenly coated.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Remove from the oven and serve warm.
Notes
- For extra flavor, add a sprinkle of crushed red pepper flakes.
- Can be served as a side dish for any main course.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
