- 1 cup roasted red peppers, chopped
- 1 cup mozzarella cheese, shredded
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut a pocket into each chicken breast, being careful not to slice all the way through.
- Stuff each pocket with roasted red peppers and mozzarella cheese, pressing gently.
- Season the chicken with salt and pepper.
- Place the stuffed chicken breasts in a baking dish, ensuring they’re not touching.
- Bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Let it rest for a few minutes before serving.
Notes
You can prepare the stuffed chicken in advance and store it in the fridge for up to 24 hours before baking. Adjust cooking time if baking straight from the fridge.
