Description

A delicious and flavorful chicken dish stuffed with roasted red peppers, fresh spinach, and creamy mozzarella cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the roasted red peppers, spinach, and mozzarella cheese.
  3. Cut a pocket in each chicken breast and stuff with the mixture.
  4. Season the outside of the chicken with olive oil, garlic powder, onion powder, salt, and pepper.
  5. Place the stuffed chicken breasts in a baking dish.
  6. Bake for 25-30 minutes or until the chicken is cooked through.
  7. Let rest for a few minutes before serving.

Notes

  • For added flavor, marinate the chicken in olive oil and spices for a few hours before stuffing.
