- 2 cups cherry tomatoes
- 6 cloves garlic, peeled
- 3 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 8 ounces pasta of choice
- Fresh basil, for garnish
- Parmesan cheese, for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss cherry tomatoes and garlic with olive oil, salt, and pepper.
- Roast in the oven for 20-25 minutes until tomatoes are blistered and garlic is golden.
- Meanwhile, cook pasta according to package instructions until al dente.
- Drain the pasta and reserve some pasta water.
- In a large bowl, combine the roasted tomatoes and garlic with the cooked pasta.
- Add reserved pasta water as needed to create a sauce.
- Toss with fresh basil and serve with Parmesan cheese if desired.
Notes
- For a spicier kick, add red pepper flakes.
- This dish can be made vegan by omitting the Parmesan cheese.
- Leftovers can be stored in the refrigerator for up to 3 days.
