Description

A delicious and creamy pasta dish featuring roasted tomatoes and garlic mixed with ricotta cheese.


Ingredients

  • 8 oz pasta of choice
  • 2 cups cherry tomatoes
  • 4 cloves garlic, minced
  • 1 cup ricotta cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss cherry tomatoes and minced garlic with olive oil, salt, and pepper.
  3. Roast in the oven for 20-25 minutes until tomatoes are blistered.
  4. Meanwhile, cook pasta according to package instructions.
  5. In a large bowl, combine the cooked pasta, roasted tomatoes, garlic, and ricotta cheese.
  6. Toss until well combined and creamy.
  7. Serve warm, garnished with fresh basil.

Notes

  • For a spicier kick, add red pepper flakes.
