- 2 cups cherry tomatoes
- 4 cloves garlic, minced
- 1 cup ricotta cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss cherry tomatoes and minced garlic with olive oil, salt, and pepper.
- Roast in the oven for 20-25 minutes until tomatoes are blistered.
- Meanwhile, cook pasta according to package instructions.
- In a large bowl, combine the cooked pasta, roasted tomatoes, garlic, and ricotta cheese.
- Toss until well combined and creamy.
- Serve warm, garnished with fresh basil.
