Ingredients

  • 1 lb sausage
  • 2 large sweet potatoes, diced
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine diced sweet potatoes, olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 20 minutes.
  4. While the sweet potatoes are roasting, cook the sausage in a skillet over medium heat until browned.
  5. In a small bowl, mix honey and minced garlic.
  6. Once the sausage is cooked, add the honey garlic mixture to the skillet and stir to coat.
  7. After 20 minutes, add the sausage to the baking sheet with sweet potatoes and roast for an additional 10 minutes.
  8. Garnish with fresh parsley before serving.
