- 2 medium zucchinis, sliced into 1/4-inch rounds
- 8 oz (225g) cremini or button mushrooms, sliced
- 1 medium yellow onion, sliced into half-moons
- 3 cloves garlic, finely minced
- 2 tbsp olive oil or unsalted butter
- 1/2 tsp dried Italian seasoning or thyme
- Salt and black pepper, to taste
- Fresh lemon juice (optional)
- 2 tbsp fresh flat-leaf parsley, finely chopped (for garnish)
Instructions
- Heat the olive oil or butter in a large skillet over medium heat until it shimmers.
- Add the sliced onion and sauté for about 3-4 minutes until soft and golden.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced zucchini and mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally until tender and slightly browned.
- Season with dried Italian seasoning, salt, and black pepper to taste. Stir well.
- If desired, sprinkle with fresh lemon juice just before serving.
- Garnish with chopped parsley and enjoy!
Notes
For a make-ahead option, prepare the veggies a day in advance and sauté when ready to serve. Experiment with different vegetables or spices for variety.
