Description

Delicate French macarons infused with earthy beet powder and filled with creamy goat cheese, creating a unique and tasty treat.


Ingredients

  • 1 cup almond flour
  • 1 cup powdered sugar
  • 3 egg whites
  • ¼ cup granulated sugar
  • 1 teaspoon beet powder
  • Salt to taste
  • 4 oz goat cheese, softened
  • ¼ cup heavy cream
  • ¼ cup toasted walnuts, chopped
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients in a bowl: whisk together almond flour, powdered sugar, and beet powder until well combined.
  3. Beat egg whites in a separate bowl on medium speed until foamy; gradually add granulated sugar, continuing to beat until stiff peaks form (about 5–7 minutes).
  4. Fold the dry mixture into the egg whites until just combined, being careful not to over-mix.
  5. Pipe small circles of batter onto the prepared baking sheet, leaving space between them.
  6. Rest the macarons at room temperature for about 30 minutes to allow a skin to form.
  7. Bake in the oven for 20-25 minutes until stable and can be lifted off cleanly from the parchment.
  8. Cool completely before filling.
  9. Make the filling by whipping together goat cheese, heavy cream, lemon juice, and salt until smooth.
  10. Add chopped walnuts and gently fold into the filling.
  11. Assemble the macarons by piping filling onto half of the shells and sandwiching them with the other halves.
  12. Serve at room temperature and enjoy!

Notes

Make macarons a day in advance and store shells separately from the filling to retain texture.
