- 1 cup almond flour
- 1 cup powdered sugar
- 3 egg whites
- ¼ cup granulated sugar
- 1 teaspoon beet powder
- Salt to taste
- 4 oz goat cheese, softened
- ¼ cup heavy cream
- ¼ cup toasted walnuts, chopped
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Mix dry ingredients in a bowl: whisk together almond flour, powdered sugar, and beet powder until well combined.
- Beat egg whites in a separate bowl on medium speed until foamy; gradually add granulated sugar, continuing to beat until stiff peaks form (about 5–7 minutes).
- Fold the dry mixture into the egg whites until just combined, being careful not to over-mix.
- Pipe small circles of batter onto the prepared baking sheet, leaving space between them.
- Rest the macarons at room temperature for about 30 minutes to allow a skin to form.
- Bake in the oven for 20-25 minutes until stable and can be lifted off cleanly from the parchment.
- Cool completely before filling.
- Make the filling by whipping together goat cheese, heavy cream, lemon juice, and salt until smooth.
- Add chopped walnuts and gently fold into the filling.
- Assemble the macarons by piping filling onto half of the shells and sandwiching them with the other halves.
- Serve at room temperature and enjoy!
Notes
Make macarons a day in advance and store shells separately from the filling to retain texture.
