- 1/2 cup All-Purpose Flour (or gluten-free flour)

- 1/4 cup Ketchup
- 1/4 cup Rice Vinegar (or apple cider vinegar)
- 1/4 cup Brown Sugar (or coconut sugar)
- 3 cloves Minced Garlic
- 1 tablespoon Grated Fresh Ginger
- 1 teaspoon Black Pepper
- 1/2 teaspoon Red Pepper Flakes (optional)
- 1/2 cup Unsalted Cashews
- 2 tablespoons Green Onions (sliced)
- 1 tablespoon Sesame Seeds
Instructions
- Prepare the chicken: Rinse and pat your chicken breasts dry, trimming any excess fat.
- Coat the chicken: Toss the chicken pieces in flour seasoned with black pepper until well coated.
- Add the sauce ingredients: Combine soy sauce, ketchup, rice vinegar, brown sugar, minced garlic, grated ginger, and red pepper flakes in a bowl.
- Combine in the slow cooker: Place the floured chicken in the slow cooker and pour the sauce over it.
- Cook: Set on low for 4-6 hours or high for 2-3 hours until chicken is tender.
- Finish with cashews: In the last 30 minutes of cooking, add the cashews to the slow cooker.
- Serve: Garnish with green onions and sesame seeds; serve over rice or noodles.
Notes
For a vegetarian option, substitute chicken with firm tofu. You can also prep ingredients the night before and store them in the fridge.
