  • 1/2 cup Soy Sauce (or tamari for gluten-free)
  • 1/4 cup Ketchup
  • 1/4 cup Rice Vinegar (or apple cider vinegar)
  • 1/4 cup Brown Sugar (or coconut sugar)
  • 3 cloves Minced Garlic
  • 1 tablespoon Grated Fresh Ginger
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes (optional)
  • 1/2 cup Unsalted Cashews
  • 2 tablespoons Green Onions (sliced)
  • 1 tablespoon Sesame Seeds

Instructions

  1. Prepare the chicken: Rinse and pat your chicken breasts dry, trimming any excess fat.
  2. Coat the chicken: Toss the chicken pieces in flour seasoned with black pepper until well coated.
  3. Add the sauce ingredients: Combine soy sauce, ketchup, rice vinegar, brown sugar, minced garlic, grated ginger, and red pepper flakes in a bowl.
  4. Combine in the slow cooker: Place the floured chicken in the slow cooker and pour the sauce over it.
  5. Cook: Set on low for 4-6 hours or high for 2-3 hours until chicken is tender.
  6. Finish with cashews: In the last 30 minutes of cooking, add the cashews to the slow cooker.
  7. Serve: Garnish with green onions and sesame seeds; serve over rice or noodles.

Notes

For a vegetarian option, substitute chicken with firm tofu. You can also prep ingredients the night before and store them in the fridge.
