  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 whole wheat pitas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chicken strips with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the chicken on a sheet pan and bake for 20 minutes.
  4. While the chicken is baking, prepare the herby ranch by mixing Greek yogurt, dill, parsley, and lemon juice in a bowl.
  5. After 20 minutes, add cherry tomatoes, cucumber, and red onion to the sheet pan and bake for an additional 10 minutes.
  6. Warm the pitas in the oven for the last 5 minutes of cooking.
  7. Assemble the pitas by filling them with the chicken and vegetable mixture, and drizzle with herby ranch.
