Description

A delicious and easy one-pan meal featuring gnocchi, sausage, and fresh summer vegetables, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound gnocchi
  • 1 pound Italian sausage, sliced
  • 2 cups cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. On a large sheet pan, combine the gnocchi, sausage, cherry tomatoes, zucchini, and bell pepper.
  3. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss to combine.
  4. Spread the mixture in an even layer on the sheet pan.
  5. Bake for 20-25 minutes, or until the sausage is cooked through and the vegetables are tender.
  6. Remove from the oven and garnish with fresh basil before serving.

Notes
