Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups bell peppers, sliced
  • 1 cup red onion, sliced
  • 1 cup zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  3. Add the chicken breasts to the marinade and let them sit for at least 15 minutes.
  4. On a sheet pan, arrange the marinated chicken and surround it with sliced bell peppers, red onion, and zucchini.
  5. Drizzle any remaining marinade over the vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Remove from the oven and let it rest for a few minutes before serving.
