Description

A vibrant and flavorful bowl filled with succulent shrimp, creamy avocado, and a bright mango salsa, perfect for any occasion.

Ingredients

Scale
  • 12 oz shrimp, fresh or frozen
  • 2 avocados, ripe
  • 1 mango, juicily ripe
  • 1 small red onion
  • 1 handful cilantro
  • 1 small jalapeño
  • 2 limes
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Season the shrimp with olive oil, chili powder, salt, and black pepper in a mixing bowl.
  2. Cook the shrimp in a skillet over medium-high heat for 2-3 minutes per side until pink.
  3. Prepare the mango salsa by dicing the mango, red onion, and jalapeño, then mixing with chopped cilantro and lime juice.
  4. Make the lime-chili sauce by whisking together lime juice, olive oil, honey, chili powder, salt, and black pepper.
  5. Slice the avocados and drizzle with lime juice to prevent browning.
  6. Assemble the bowls with rice or greens, layering on shrimp, avocado, and mango salsa.
  7. Finish with the lime-chili sauce and extra cilantro, then serve immediately.

Notes

Make mango salsa and lime-chili sauce in advance for deeper flavors. Ensure shrimp are not overcooked for best texture.
