Description

Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 1/4 cup olive oil
  • 1/2 cup green olives, pitted and sliced
  • 2 tablespoons capers, rinsed and drained
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until golden brown.
  4. In a large bowl, combine the roasted cauliflower, olives, capers, red onion, and parsley.
  5. Drizzle with lemon juice and toss to combine.
  6. Serve warm or at room temperature.
