Ingredients

- 1 medium head of cauliflower, cut into florets
- 1/4 cup olive oil
- 1/2 cup green olives, pitted and sliced
- 2 tablespoons capers, rinsed and drained
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cauliflower florets with olive oil, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until golden brown.
- In a large bowl, combine the roasted cauliflower, olives, capers, red onion, and parsley.
- Drizzle with lemon juice and toss to combine.
- Serve warm or at room temperature.
Notes
- For added flavor, consider adding some crushed red pepper flakes.
