- 1 cup tart cranberries (fresh or frozen)
- 1 cup balsamic vinegar
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth

- Fresh thyme or rosemary for garnish (optional)
Instructions
- Preheat the oven to 300°F (150°C).
- Heat the olive oil in a large Dutch oven over medium-high heat.
- Season the chuck roast with salt and pepper and sear on all sides until browned.
- Remove the roast and set aside.
- Add the chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
- Stir in the balsamic vinegar, scraping up any browned bits from the bottom.
- Add the cranberries and beef broth, bringing to a gentle simmer.
- Return the roast to the pot, cover, and transfer to the oven.
- Braise for 3-4 hours or until the meat is fork-tender.
- Remove the roast and let it rest for 15 minutes before slicing.
- Serve with the cranberry balsamic glaze, garnished with fresh herbs if desired.
