  • 1 cup tart cranberries (fresh or frozen)
  • 1 cup balsamic vinegar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat the olive oil in a large Dutch oven over medium-high heat.
  3. Season the chuck roast with salt and pepper and sear on all sides until browned.
  4. Remove the roast and set aside.
  5. Add the chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  6. Stir in the balsamic vinegar, scraping up any browned bits from the bottom.
  7. Add the cranberries and beef broth, bringing to a gentle simmer.
  8. Return the roast to the pot, cover, and transfer to the oven.
  9. Braise for 3-4 hours or until the meat is fork-tender.
  10. Remove the roast and let it rest for 15 minutes before slicing.
