Description

A tender and juicy beef chuck roast slow-cooked with root beer and barbecue sauce for a rich, flavorful meal that melts in your mouth.


Ingredients

  • 45 lb beef chuck roast, trimmed of excess fat
  • 1 (12 oz) can root beer (not diet)
  • 1 1/2 cups thick, smoky barbecue sauce, plus extra for serving

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Pour the root beer over the roast.
  3. Add the barbecue sauce, reserving some for serving later.
  4. Cover and cook on low for 480 minutes or until the beef is tender.
  5. Shred the beef with two forks once it’s done cooking.
  6. Serve with extra barbecue sauce on the side.

Notes

Make-ahead: Combine the root beer and barbecue sauce with the beef in advance. Storage: Leftovers can be stored for up to 3 days in the refrigerator, or frozen for up to 3 months.
