- 2 pounds stew meat (beef chuck or round)
- 4 cups beef broth
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon bay leaf
- Salt and pepper to taste
Instructions
- Prepare the meat by seasoning it generously with salt and pepper.
- Layer the veggies by placing the seasoned meat into your slow cooker, followed by the sliced carrots, diced potatoes, chopped onion, and minced garlic.
- Mix the broth in a separate bowl by whisking together the beef broth, tomato paste, thyme, and bay leaf.
- Cook it low & slow by covering your slow cooker and setting it to low for 8 hours or high for 4 hours.
- Taste and adjust seasoning before serving.
