Ingredients

  • 2 pounds stew meat (beef chuck or round)
  • 4 cups beef broth
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the meat by seasoning it generously with salt and pepper.
  2. Layer the veggies by placing the seasoned meat into your slow cooker, followed by the sliced carrots, diced potatoes, chopped onion, and minced garlic.
  3. Mix the broth in a separate bowl by whisking together the beef broth, tomato paste, thyme, and bay leaf.
  4. Cook it low & slow by covering your slow cooker and setting it to low for 8 hours or high for 4 hours.
  5. Taste and adjust seasoning before serving.
