- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 2 teaspoons dried Italian herbs (basil, oregano, thyme)
- 4 cloves garlic, minced
- 1 cup chicken broth
- 8 ounces orzo pasta
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Place the chicken in the slow cooker and season with salt, pepper, Italian herbs, and minced garlic.
- Add the grated Parmesan cheese over the chicken.
- Pour in the chicken broth to cover the chicken.
- Set the slow cooker to low and cook for 4-6 hours until the chicken is tender.
- Prepare the orzo by cooking it according to package instructions about 30 minutes prior to serving.
- Combine the shredded chicken and cooked orzo in the slow cooker and stir well.
Notes
Make-ahead by seasoning chicken the night before. Customize with vegetables or different herbs as desired.
