  • 4 Yukon Gold potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/4 cup milk
  • Garlic powder to taste

Instructions

  1. Preheat your smoker to 225°F and season the ribeye steaks generously with salt and pepper.
  2. Smoke the ribeye for about 1.5 to 2 hours, aiming for an internal temperature of medium-rare (130°F).
  3. Preheat your oven to 400°F, toss the mixed vegetables in olive oil, salt, and pepper, and spread them out on a baking sheet.
  4. Roast the vegetables for about 20-25 minutes until vibrant and tender.
  5. Boil the Yukon Gold potatoes in salted water until fork-tender, approximately 15-20 minutes.
  6. Mash the potatoes and mix in the butter, milk, garlic powder, salt, and pepper until creamy.
  7. Allow the ribeye to rest for a few minutes, then slice and serve with the roasted veggies and mashed potatoes.

Notes
