Ingredients

- 8 oz pasta
- 2 salmon fillets
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Season the salmon fillets with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil over medium heat and cook the salmon for about 4-5 minutes on each side until cooked through.
- Remove the salmon from the skillet and flake it into bite-sized pieces.
- In the same skillet, add heavy cream and cherry tomatoes; simmer for 3-4 minutes.
- Add the cooked pasta and flaked salmon to the skillet; toss to combine.
- Stir in grated Parmesan cheese and adjust seasoning if necessary.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add more Cajun seasoning.
- Can substitute salmon with shrimp or chicken if desired.
- Leftovers can be stored in the refrigerator for up to 2 days.
