Description

Southern Breakfast Enchiladas filled with eggs, cheese, and sausage, topped with a creamy sausage gravy.


Ingredients

  • 8 large flour tortillas
  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned.
  3. In a bowl, whisk together the eggs, salt, and pepper, then scramble them in the skillet with the sausage.
  4. Warm the tortillas in a microwave or on a skillet until pliable.
  5. Fill each tortilla with the sausage and egg mixture, sprinkle with cheese, and roll them up.
  6. Place the rolled tortillas in a baking dish.
  7. In a saucepan, whisk together the flour, milk, garlic powder, and onion powder over medium heat until thickened.
  8. Pour the sausage gravy over the enchiladas in the baking dish.
  9. Bake for 20-25 minutes until heated through and cheese is melted.

Notes

  • For a spicier version, add jalapeños to the filling.
  • Can substitute turkey sausage for a lighter option.
  • Serve with fresh salsa or avocado on the side.
