- 8 large flour tortillas
- 1 pound breakfast sausage
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the breakfast sausage over medium heat until browned.
- In a bowl, whisk together the eggs, salt, and pepper, then scramble them in the skillet with the sausage.
- Warm the tortillas in a microwave or on a skillet until pliable.
- Fill each tortilla with the sausage and egg mixture, sprinkle with cheese, and roll them up.
- Place the rolled tortillas in a baking dish.
- In a saucepan, whisk together the flour, milk, garlic powder, and onion powder over medium heat until thickened.
- Pour the sausage gravy over the enchiladas in the baking dish.
- Bake for 20-25 minutes until heated through and cheese is melted.
Notes
- For a spicier version, add jalapeños to the filling.
- Can substitute turkey sausage for a lighter option.
- Serve with fresh salsa or avocado on the side.
