Description

Ingredients

  • 4 medium potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 6 large eggs
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for frying

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced potatoes and onions, seasoning with salt and pepper. Cook until the potatoes are tender.
  3. In a bowl, beat the eggs and season with salt and pepper.
  4. Once the potatoes are cooked, drain excess oil and add the potato mixture to the eggs, mixing well.
  5. Return the mixture to the skillet and cook on low heat until the bottom is set.
  6. Carefully flip the tortilla to cook the other side until golden brown.
  7. Slide the tortilla onto a plate and let it cool slightly before slicing and serving.

Notes

  • For a richer flavor, you can add bell peppers or chorizo.
  • Serve warm or at room temperature.
