Description

Ingredients

  • Juice and zest of 1 orange
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cubed butternut squash with olive oil, cinnamon, nutmeg, ginger, salt, and pepper.
  3. Add the orange juice and zest, mixing well to coat the squash evenly.
  4. Spread the squash in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
  6. Remove from the oven and garnish with fresh parsley before serving.
