- 1 cup grated carrots
- 1 ½ cups all-purpose flour

- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini and carrots.
- In another bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the sugars, eggs, oil, and vanilla extract.
- Combine the wet ingredients with the zucchini and carrot mixture.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For added flavor, consider adding nuts or raisins to the batter.
- This bread can be stored in an airtight container for up to a week.
