- 2 chicken breasts
- 2 tablespoons Cajun seasoning
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 8 ounces pasta (penne or fusilli)
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil over medium heat and cook the chicken until browned on both sides.
- Transfer the chicken to a baking dish and add cherry tomatoes around it.
- Roast in the oven for 20-25 minutes until the chicken is cooked through and tomatoes are blistered.
- Meanwhile, cook the pasta according to package instructions.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add heavy cream and Parmesan cheese, stirring until combined.
- Slice the roasted chicken and toss it with the pasta and sauce.
- Garnish with fresh basil before serving.
Notes
- Adjust the level of Cajun seasoning to your spice preference.
- For a lighter version, substitute heavy cream with Greek yogurt.
- Leftovers can be stored in the refrigerator for up to 3 days.
