Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic, sauté until translucent.
  4. Add ground beef, chili powder, cumin, salt, and pepper; cook until browned.
  5. Meanwhile, toss diced sweet potatoes with olive oil, salt, and pepper, and spread on a baking sheet.
  6. Roast sweet potatoes in the oven for about 25-30 minutes until tender.
  7. Combine the cooked ground beef with roasted sweet potatoes in a bowl.
  8. Garnish with fresh cilantro before serving.
