- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup rice
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 avocado, sliced
- 1 cup corn
- 1 cup black beans
- 1/2 cup diced tomatoes
- 1/4 cup red onion, diced
Instructions
- In a bowl, combine shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well and let marinate for 15 minutes.
- In a saucepan, bring water to a boil and add rice. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
- Once rice is cooked, stir in chopped cilantro and lime juice. Set aside.
- In a skillet over medium heat, cook the marinated shrimp for 2-3 minutes on each side until pink and cooked through.
- To assemble, place a serving of cilantro lime rice in a bowl, top with shrimp, corn, black beans, diced tomatoes, red onion, and avocado slices.

- Feel free to adjust the spice level by adding more or less chili powder.
