Description

A delicious and vibrant dish featuring spicy shrimp served over cilantro lime rice, perfect for a quick and satisfying meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup rice
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 avocado, sliced
  • 1 cup corn
  • 1 cup black beans
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, diced

Instructions

  1. In a bowl, combine shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well and let marinate for 15 minutes.
  2. In a saucepan, bring water to a boil and add rice. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  3. Once rice is cooked, stir in chopped cilantro and lime juice. Set aside.
  4. In a skillet over medium heat, cook the marinated shrimp for 2-3 minutes on each side until pink and cooked through.
  5. To assemble, place a serving of cilantro lime rice in a bowl, top with shrimp, corn, black beans, diced tomatoes, red onion, and avocado slices.
  6. Serve immediately and enjoy your Spicy Shrimp Taco Bowls!

Notes

  • Feel free to adjust the spice level by adding more or less chili powder.
