Ingredients

- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup mango, diced
- 1/2 red onion, diced
- 1 jalapeño, minced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
Instructions
- In a bowl, combine shrimp, olive oil, chili powder, cumin, paprika, salt, and pepper. Mix well.
- Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
- In another bowl, mix together mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
- Warm the corn tortillas in a dry skillet or microwave.
- Assemble the tacos by placing shrimp on the tortillas and topping with mango salsa.
- Serve immediately and enjoy!
Notes
- For extra heat, add more jalapeño to the salsa.
- These tacos can be served with avocado or sour cream for added creaminess.
- Leftover shrimp can be stored in the refrigerator for up to 2 days.
