Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup mango, diced
  • 1/2 red onion, diced
  • 1 jalapeño, minced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime

Instructions

  1. In a bowl, combine shrimp, olive oil, chili powder, cumin, paprika, salt, and pepper. Mix well.
  2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
  3. In another bowl, mix together mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
  4. Warm the corn tortillas in a dry skillet or microwave.
  5. Assemble the tacos by placing shrimp on the tortillas and topping with mango salsa.
  6. Serve immediately and enjoy!

Notes

  • For extra heat, add more jalapeño to the salsa.
  • These tacos can be served with avocado or sour cream for added creaminess.
  • Leftover shrimp can be stored in the refrigerator for up to 2 days.
