Ingredients

Instructions
- Cook the rice noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the mixed greens, shredded carrots, sliced bell peppers, cucumber, cilantro, and mint.
- Add the cooled rice noodles to the salad mixture.
- In a separate bowl, whisk together the ingredients for the spicy ginger dressing.
- Pour the dressing over the salad and toss gently to combine.
- Top with crushed peanuts before serving.
Notes
- For a vegetarian option, omit the peanuts if allergic.
