- 1 tsp fresh ginger, grated
- 1 tbsp cornstarch (for coating)
- 1 tbsp vegetable oil
- 2 green onions, chopped
- 1 tbsp sesame seeds (optional)
- 2 cups cooked jasmine or short-grain rice
- 1/3 cup mayonnaise
- 1–2 tbsp Sriracha (to taste)
- 1 tsp lemon or lime juice
- 1/2 tsp garlic powder
- For toppings: sliced cucumber, shredded carrots, avocado slices, turkey bacon bits (optional), nori strips or seaweed flakes
Instructions
- Prepare the Chicken Marinade: In a large mixing bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined. Add the chicken pieces, tossing thoroughly to coat. Let it marinate for at least 30 minutes, or if you have time, overnight in the fridge for full flavor.
- Coat the Chicken: After the marinating time, drain any excess marinade. Lightly coat the marinated chicken pieces with cornstarch to create a crispy surface during cooking.
- Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Carefully add the chicken in a single layer and let it cook for 6-8 minutes, turning occasionally until golden brown and cooked through.
- Create the Sauce: Once fully cooked, pour any remaining marinade into the skillet. Allow it to bubble and thicken into a sticky glaze, then fold in chopped green onions and sesame seeds if desired.
- Make the Spicy Mayo: In a separate small bowl, combine mayonnaise, Sriracha, lemon or lime juice, and garlic powder. Mix well and taste, adjusting the heat to your preference.
- Assemble the Bowls: To create your masterpiece, start with a generous scoop of rice in each bowl. Top with your sticky chicken, then pile on your desired toppings—cucumber, shredded carrots, avocado, and optional turkey bacon bits for that extra crunch. Finish with a generous drizzle of spicy mayo for the perfect blend of flavors.
