- 1 cup fresh strawberries, pureed
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh strawberries, chopped (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, cream together the butter, cream cheese, and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla and strawberry puree.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, mix powdered sugar with chopped strawberries and drizzle over the cooled cake.
