- 1 teaspoon chili powder (adjust according to taste)
- Salt and pepper (to taste)
Instructions
- Prepare the corn: If using fresh corn, husk and boil for 3-5 minutes until tender. Drain, cool, and cut kernels off the cob; if using canned, drain and rinse.
- Dice the vegetables: Chop the cucumber, cherry tomatoes, and finely chopped onion into bite-sized pieces.
- Make the dressing: Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
- Combine ingredients: Fold the corn, diced cucumber, tomatoes, onions, and feta cheese into the dressing.
- Chill and serve: Refrigerate for at least 30 minutes and serve cold with fresh cilantro on top.
Notes
For a make-ahead option, prepare a day in advance but add cucumber just before serving to maintain its crunch.
