Ingredients

  • 2 medium Sweet Potatoes, peeled and cubed
  • 8 strips Thick-Cut Bacon, chopped into 1-inch pieces
  • 2 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the sweet potatoes by peeling and cubing them into bite-sized pieces. Pre-cook them by boiling in salted water for about 5-7 minutes until slightly tender. Drain and set aside.
  2. Chop your bacon into 1-inch pieces while the potatoes cool.
  3. Combine the sweet potato cubes with olive oil, paprika, salt, and pepper in a large mixing bowl. Toss gently to coat.
  4. Thread the sweet potato cubes and bacon pieces onto skewers, alternating between sweet potato and bacon.
  5. Preheat your grill to medium heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the bacon is crispy and the sweet potatoes are tender.
  6. Serve hot with your favorite dipping sauce.
