- 2 medium Sweet Potatoes, peeled and cubed
- 8 strips Thick-Cut Bacon, chopped into 1-inch pieces
- 2 tablespoons Olive Oil

Instructions
- Prepare the sweet potatoes by peeling and cubing them into bite-sized pieces. Pre-cook them by boiling in salted water for about 5-7 minutes until slightly tender. Drain and set aside.
- Chop your bacon into 1-inch pieces while the potatoes cool.
- Combine the sweet potato cubes with olive oil, paprika, salt, and pepper in a large mixing bowl. Toss gently to coat.
- Thread the sweet potato cubes and bacon pieces onto skewers, alternating between sweet potato and bacon.
- Preheat your grill to medium heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the bacon is crispy and the sweet potatoes are tender.
- Serve hot with your favorite dipping sauce.
