- 2 cups mashed sweet potatoes
- 1 loaf of bread, cubed
- 4 large eggs
- 2 cups milk
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the mashed sweet potatoes, eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Add the cubed bread to the mixture and stir until the bread is fully coated.
- Pour the mixture into a greased baking dish and sprinkle with chopped pecans if desired.
- Bake for 45-50 minutes or until the top is golden brown and the casserole is set.
- Let it cool for a few minutes before serving.
Notes
- For a sweeter casserole, add more brown sugar or maple syrup.
