Description
A heartwarming soup filled with tender chicken, vibrant spinach, and creamy goodness, perfect for cozy evenings.
Ingredients
Scale
- 2 chicken breasts
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups chicken broth
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 carrots, diced
- 2 celery stalks, diced
- Salt and pepper to taste
- Olive oil
- Fresh herbs (like thyme or parsley) for garnish
Instructions
- Sauté the vegetables: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, minced garlic, diced carrots, and celery. Sauté until the vegetables soften, about 5-7 minutes.
- Cook the chicken: Place the chicken breasts in the pot and pour in the chicken broth. Bring to a gentle boil, then reduce the heat, cover, and let it simmer for approximately 25 minutes until the chicken is fully cooked through.
- Shred the chicken: Remove the chicken from the pot, allowing it to cool slightly. With two forks, shred the chicken into bite-sized pieces, then return it to the pot.
- Add the cream and spinach: Stir in the fresh spinach and heavy cream, allowing the mixture to simmer for an additional 5-10 minutes until the spinach wilts.
- Season to taste: Sprinkle in salt and pepper, adjust as needed.
- Serve with love: Ladle the soup into bowls and garnish with freshly chopped herbs.
Notes
For a dairy-free option, substitute heavy cream with coconut milk. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
