- 4 bell peppers
- 1 lb chicken breast, diced
- 1 cup teriyaki sauce
- 1 cup cooked rice
- 1/2 cup green onions, chopped
- 1/2 cup shredded cheese (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat and add the diced chicken.
- Cook the chicken until browned, then add the teriyaki sauce and cook for an additional 5 minutes.
- In a bowl, mix the cooked rice, chicken mixture, and green onions.
- Stuff the bell peppers with the chicken and rice mixture.
- If desired, top with shredded cheese.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes.
