Ingredients

  • 4 bell peppers
  • 1 lb chicken breast, diced
  • 1 cup teriyaki sauce
  • 1 cup cooked rice
  • 1/2 cup green onions, chopped
  • 1/2 cup shredded cheese (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and add the diced chicken.
  4. Cook the chicken until browned, then add the teriyaki sauce and cook for an additional 5 minutes.
  5. In a bowl, mix the cooked rice, chicken mixture, and green onions.
  6. Stuff the bell peppers with the chicken and rice mixture.
  7. If desired, top with shredded cheese.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes.
