- 1 package frozen potstickers (about 12-15)

Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
- Pour in the broth and coconut milk, adding the red curry paste and stir until everything combines.
- Toss in the sliced carrots, chopped bell pepper, and snap peas, bringing the pot to a gentle boil.
- Reduce heat and let simmer for 10 minutes.
- Gently add the frozen potstickers to the pot and cook according to package directions, about 5-7 minutes.
- Stir in soy sauce and taste for seasoning; adjust if necessary.
- Serve hot, garnished with fresh cilantro and lime wedges.
