Ingredients

  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the chickpea pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add cherry tomatoes and cook until they start to soften.
  4. Stir in the fresh spinach and cook until wilted.
  5. Add the cooked chickpea pasta, black olives, and chopped basil. Toss to combine.
  6. Season with salt and pepper to taste. Serve warm.
