- 8 oz chickpea pasta
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the chickpea pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until they start to soften.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked chickpea pasta, black olives, and chopped basil. Toss to combine.
- Season with salt and pepper to taste. Serve warm.

- For a spicier kick, add red pepper flakes.
- This dish can be served warm or cold as a pasta salad.
