- 1 can (13.5 oz) coconut milk
- 1 cup pineapple juice
- 1 cup diced fresh pineapple
- 1/2 cup shredded coconut
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 cup chopped green onions (for garnish)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, combine the rinsed rice, coconut milk, pineapple juice, sugar, and salt.
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and gently fold in the diced pineapple and shredded coconut.
- Serve warm, garnished with chopped green onions.
