- 1 lb Italian sausage (or turkey sausage for a lighter option)
- 2 medium potatoes, diced (Yukon Gold or Russets)
- 2 cups kale, chopped (or spinach or Swiss chard)
- 1 cup heavy cream (or half-and-half or coconut milk)
- 4 cups chicken broth (or vegetable broth)
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (adjust to taste)
- Salt and pepper to taste
Instructions
- Heat a large stockpot over medium heat. Add the Italian sausage, breaking it into crumbles as it browns (approx. 5-7 minutes).
- Add the diced onion and minced garlic. Sauté until the onion is translucent (about 3-4 minutes).
- Pour in the chicken broth and raise the heat to bring it to a gentle boil.
- Stir in the sliced potatoes and reduce the heat. Simmer until the potatoes are tender (about 10-15 minutes).
- Add the chopped kale and heavy cream, then season with red pepper flakes, salt, and pepper. Cook until the kale wilts and everything is heated through (about 5 minutes).
- Serve warm, ideally with crusty bread.
Notes
For a vegetarian version, use plant-based sausage and vegetable broth. The soup can be made ahead and stored for up to 3 days in the fridge.
