Ingredients

  • 1 large head of green cabbage
  • 1.5 lbs lean ground beef (or ground turkey/chicken)
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup breadcrumbs (or crushed pork rinds)
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • Salt and freshly cracked black pepper
  • 1 1/2 cups shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil
  • Fresh chopped parsley or thyme for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Prepare the cabbage by cutting it into thick, round slices or peel away the large outer leaves. Drizzle with olive oil, then sprinkle with salt and pepper.
  3. Combine the filling: In a large mixing bowl, mix the ground beef, onion, garlic, egg, breadcrumbs, Worcestershire sauce, Dijon mustard, smoked paprika, onion powder, salt, and pepper until just combined.
  4. Shape the patties into six equal portions and place them on the cabbage slices or in cabbage leaf cups.
  5. Bake in the preheated oven for about 20–22 minutes, or until the patties are cooked through.
  6. Add the cheese on top of each burger and return to the oven for an additional 5–8 minutes until melted and bubbly.
  7. Garnish with chopped parsley or thyme before serving hot.

Notes

You can customize the meat mixture and spices according to your taste. For a quicker option, use an air fryer.
