Description

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  6. Divide the batter evenly among the prepared cake pans.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  10. Once the cakes are cool, layer them with whipped cream and mixed berries in between each layer.
  11. Frost the top and sides of the cake with the remaining whipped cream and decorate with additional berries.
  12. Chill the cake for at least 1 hour before serving.

Notes

  • For a richer flavor, you can add a teaspoon of almond extract to the batter.
  • Make sure the berries are fresh and washed before using.
  • This cake can be made a day in advance and stored in the refrigerator.
