- 2 medium zucchinis, diced
- 2 tablespoons olive oil
- 1 lemon, juiced

Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water and cook according to package instructions.
- Toss the diced zucchinis with olive oil, salt, and pepper, and spread them on a baking sheet.
- Roast the zucchinis in the oven for about 20 minutes or until tender.
- In a small bowl, whisk together the lemon juice and honey to make the dressing.
- Once the quinoa is cooked, fluff it with a fork and combine it with the roasted zucchini.
- Drizzle the lemon-honey dressing over the salad and toss to combine.
- Garnish with fresh parsley before serving.
