Description

A delicious and nutritious warm quinoa salad featuring roasted zucchini and a zesty lemon-honey dressing.


Ingredients

  • 1 cup quinoa
  • 2 medium zucchinis, diced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water and cook according to package instructions.
  3. Toss the diced zucchinis with olive oil, salt, and pepper, and spread them on a baking sheet.
  4. Roast the zucchinis in the oven for about 20 minutes or until tender.
  5. In a small bowl, whisk together the lemon juice and honey to make the dressing.
  6. Once the quinoa is cooked, fluff it with a fork and combine it with the roasted zucchini.
  7. Drizzle the lemon-honey dressing over the salad and toss to combine.
  8. Garnish with fresh parsley before serving.
