- 1 lb boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (15 oz) ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the chicken breasts and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Add the broken lasagna noodles and Italian seasoning, and simmer until noodles are tender.
- Stir in the ricotta, mozzarella, and Parmesan cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.

- For a spicier version, add red pepper flakes.
