Description

Delicious and elegant white chocolate raspberry macarons that combine the sweetness of white chocolate with the tartness of raspberries.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1/2 cup white chocolate, melted
  • 1/2 cup raspberry puree
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites until foamy, then add cream of tartar and gradually add granulated sugar until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites until fully combined.
  5. Pipe the mixture onto the prepared baking sheet in small circles.
  6. Let the macarons sit for 30 minutes to form a skin.
  7. Bake for 15-20 minutes, then let cool completely.
  8. For the filling, beat together softened butter, melted white chocolate, raspberry puree, and powdered sugar until smooth.
  9. Pipe the filling onto half of the macarons and sandwich with the other half.
  10. Refrigerate for at least 30 minutes before serving.

  • Ensure the egg whites are at room temperature for better volume.
  • Use fresh raspberries for the puree for the best flavor.
