Delicious and elegant white chocolate raspberry macarons that combine the sweetness of white chocolate with the tartness of raspberries.

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/2 cup white chocolate, melted
- 1/2 cup raspberry puree
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar (for filling)
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a bowl, sift together almond flour and powdered sugar.
- In a separate bowl, beat egg whites until foamy, then add cream of tartar and gradually add granulated sugar until stiff peaks form.
- Gently fold the almond flour mixture into the egg whites until fully combined.
- Pipe the mixture onto the prepared baking sheet in small circles.
- Let the macarons sit for 30 minutes to form a skin.
- Bake for 15-20 minutes, then let cool completely.
- For the filling, beat together softened butter, melted white chocolate, raspberry puree, and powdered sugar until smooth.
- Pipe the filling onto half of the macarons and sandwich with the other half.
- Refrigerate for at least 30 minutes before serving.
Notes
- Ensure the egg whites are at room temperature for better volume.
- Use fresh raspberries for the puree for the best flavor.
- Macarons can be stored in an airtight container in the refrigerator for up to a week.
