- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 bay leaves
Instructions
- Brown the beef: In a large heavy-bottomed pot, heat the olive oil over medium heat. Once the oil shimmers, add the beef cubes in batches, browning them on all sides for about 5-7 minutes. Remove and set aside.
- Sauté the vegetables: In the same pot, add onion, carrots, and garlic. Sauté for about 5-6 minutes until soft and translucent.
- Combine and simmer: Return the beef to the pot, add beef broth, potatoes, thyme, rosemary, salt, pepper, and bay leaves. Stir gently, bring to a boil, reduce heat to low, cover, and simmer for 90 minutes to 2 hours.
- Finishing touches: Remove bay leaves and ladle stew into bowls. Serve with crusty bread for dipping.
