Description

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Brown the beef: In a large heavy-bottomed pot, heat the olive oil over medium heat. Once the oil shimmers, add the beef cubes in batches, browning them on all sides for about 5-7 minutes. Remove and set aside.
  2. Sauté the vegetables: In the same pot, add onion, carrots, and garlic. Sauté for about 5-6 minutes until soft and translucent.
  3. Combine and simmer: Return the beef to the pot, add beef broth, potatoes, thyme, rosemary, salt, pepper, and bay leaves. Stir gently, bring to a boil, reduce heat to low, cover, and simmer for 90 minutes to 2 hours.
  4. Finishing touches: Remove bay leaves and ladle stew into bowls. Serve with crusty bread for dipping.
